How to Prepare

  1. In a large mixing bowl, combine 10 cups of whole wheat flour
  2. 2 tsp salt, and 4 tbsp yogurt. Mix well.
  3. Gradually add 4-5 cups of water to form a soft dough. Knead for 8-10 minutes until smooth.
  4. Cover the dough with a damp cloth and let it rest for 30 minutes.
  5. Preheat the tandoor or oven to 250°C (480°F). If using a tawa, heat it on medium-high.
  6. Divide the dough into 20 equal portions. Roll each portion into a ball.
  7. Flatten a ball and roll it into a 6-8 inch circle. Apply 1 tsp ghee and sprinkle a pinch of dry flour.
  8. Fold the circle into a semi-circle, apply ghee again, and fold into a triangle or square shape.
  9. Roll the folded dough gently to maintain layers, ensuring it is not too thin.
  10. Place the paratha in the tandoor or on the hot tawa. Cook for 1-2 minutes until brown spots appear.
  11. Flip and cook the other side for another 1-2 minutes. Apply ghee on both sides.
  12. Remove from heat and serve hot with curd, pickle, or curry.
