How to Prepare

  1. In a large mixing bowl, combine 10 cups of whole wheat flour
  2. 2 tsp salt, and 2 cups of water. Knead into a soft, pliable dough for about 10 minutes.
  3. Cover the dough with a damp cloth and let it rest for 20 minutes.
  4. Divide the dough into 40 equal portions (for 20 people
  5. 2 rotis each).
  6. Preheat the tandoor or oven to 250°C (480°F).
  7. Roll each portion into a flat, round shape about 6-8 inches in diameter, using a rolling pin and a little dry flour to prevent sticking.
  8. Slap the rolled roti onto the inner wall of the tandoor or place it on a preheated baking tray if using an oven.
  9. Cook for 2-3 minutes in the tandoor (or 5-7 minutes in the oven) until brown spots appear and the roti puffs up slightly.
  10. Remove using tongs, brush with a little ghee or butter if desired, and serve hot.
