How to Prepare

  1. Pour 10 liters of full-fat milk into a heavy-bottomed pan and bring it to a boil over medium heat.
  2. Reduce the heat to low and simmer, stirring occasionally to prevent sticking, until the milk reduces to half its volume (about 2 hours).
  3. Add 2.5 kg of sugar to the reduced milk and stir continuously until it dissolves completely.
  4. Continue cooking on low heat, stirring frequently, until the mixture thickens to a semi-solid consistency (about 30-40 minutes).
  5. Add 100 g of ghee and 2 tsp of cardamom powder, mixing well to incorporate the flavors.
  6. Cook for an additional 5-10 minutes until the mixture leaves the sides of the pan and forms a soft, fudgy texture.
  7. Turn off the heat and let it cool slightly before transferring to a serving bowl.
  8. Garnish with chopped nuts like almonds or cashews if desired, and serve warm or at room temperature.
