How to Prepare

  1. Rinse and soak the wheat grains in water for 8 hours.
  2. Grind the soaked wheat into a fine paste using a wet grinder or blender, adding a little water if needed.
  3. Strain the paste through a fine muslin cloth to extract wheat milk. Repeat the process twice to extract maximum milk.
  4. In a heavy-bottomed pan, heat ghee over medium flame.
  5. Add the wheat milk to the pan and stir continuously to avoid lumps.
  6. Gradually add sugar while stirring constantly.
  7. Continue stirring until the mixture thickens and starts leaving the sides of the pan (this may take 1-1.5 hours).
  8. Add cardamom powder and a pinch of saffron for flavor, and mix well.
  9. Add roasted cashew nuts and raisins, and mix thoroughly.
  10. Once the halwa reaches a glossy texture and doesn't stick to the pan, turn off the heat.
  11. Serve hot or let it cool and cut into pieces.
