How to Prepare
Prepare the dough by mixing 4 cups of all-purpose flour with 1.5 cups of water and a pinch of salt. Knead until smooth, cover, and let it rest for 30 minutes.
Finely chop 2 kg of mixed vegetables (cabbage, carrots, beans, bell peppers).
Heat 4 tbsp of oil in a pan, add 10 cloves of minced garlic and 4 tbsp of grated ginger, and sauté for 1 minute.
Add the chopped vegetables
4 tbsp soy sauce
2 tbsp vinegar
1 tsp black pepper, and salt to taste. Cook for 5-7 minutes until the vegetables are soft. Let the filling cool.
Divide the dough into small balls (about 80-100 balls for 20 people, assuming 4-5 momos per person).
Roll each ball into a thin circle (about 3 inches in diameter).
Place 1-2 tsp of filling in the center of each circle, fold, and pleat to seal the momo into a dumpling shape.
Arrange the momos in a greased steamer tray, ensuring they don’t touch each other.
Steam for 10-12 minutes until the momos are translucent and cooked through.
Serve hot with spicy chili sauce or soy dipping sauce.
