How to Prepare
Prepare the dough by mixing 5 cups of whole wheat flour with 2 tsp salt and enough water to form a soft dough. Knead for 5-7 minutes and let it rest for 30 minutes.
Boil 4 large potatoes, peel, and mash them in a mixing bowl.
Add 2 cups of finely chopped mixed vegetables (carrots, peas, beans) to the mashed potatoes.
Add 4 tsp ginger-garlic paste
4 tsp garam masala
2 tsp red chili powder
2 tsp cumin powder, salt to taste, and 1 cup chopped coriander leaves. Mix well to form the stuffing.
Divide the dough into 20 equal portions and roll each portion into a small ball.
Take one dough ball, flatten it, and place 2-3 tbsp of the vegetable stuffing in the center. Fold the edges to seal the stuffing inside.
Roll out the stuffed dough ball into a flat circle (paratha) about 6-7 inches in diameter, dusting with dry flour as needed.
Heat a flat griddle (tawa) over medium heat. Place the rolled paratha on the tawa and cook for 1-2 minutes until small bubbles appear.
Flip the paratha, apply 1 tsp of ghee or oil on the cooked side, and cook the other side for 1-2 minutes until golden brown spots appear.
Flip again, apply ghee or oil on the other side, and cook for another 30 seconds. Repeat for all parathas.
