How to Prepare

  1. Boil 10 medium potatoes until soft, then peel and mash them coarsely in a large bowl.
  2. Add 2 tsp salt
  3. 2 tsp red chili powder
  4. 2 tsp cumin powder, and 2 tsp chaat masala to the mashed potatoes. Mix well.
  5. Prepare puris by mixing 4 cups wheat flour with 1 tsp salt and enough water to form a stiff dough. Let it rest for 15 minutes.
  6. Divide the dough into small balls and roll each ball into a small circle (about 3 inches in diameter).
  7. Heat oil in a deep frying pan over medium heat. Fry the puris until golden and crisp, then drain on paper towels.
  8. Prepare the chaat assembly by placing 3-4 puris on each plate. Crush them lightly with your hand.
  9. Add a generous spoonful of spiced mashed potatoes on top of the crushed puris.
  10. Drizzle 2-3 tbsp of sweetened yogurt
  11. 1-2 tbsp green chutney, and 1-2 tbsp tamarind chutney over the potatoes.
  12. Sprinkle sev, chopped coriander leaves, and a pinch of chaat masala on top.
  13. Serve immediately to ensure the puris remain crisp.
