How to Prepare
Prepare the dough for rotis by mixing 5 cups of whole wheat flour with water and a pinch of salt. Knead into a soft dough, cover, and set aside for 20 minutes.
Boil 10 medium potatoes until soft, peel, and mash them in a large bowl.
Heat 4 tbsp oil in a skillet, add 2 tsp cumin seeds, and let them splutter.
Add 2 cups finely chopped onions and sauté until golden brown.
Add 2 tbsp ginger-garlic paste and cook for 1 minute.
Add 2 cups chopped mixed vegetables (carrots, beans, peas) and cook for 5-7 minutes.
Add mashed potatoes
2 tsp chaat masala
2 tsp garam masala
1 tsp red chili powder, and salt to taste. Mix well and cook for 3 minutes. Set aside to cool.
Divide the dough into 20 equal portions, roll each into a thin roti, and cook on a hot tawa with a little oil until golden on both sides.
Place a portion of the vegetable filling in the center of each roti, add a drizzle of green chutney, tamarind chutney, and a sprinkle of chopped onions and sev.
Roll the roti tightly to form a Frankie and secure with a toothpick if needed.
